Ingredients

  • 1 c. acini de pepe macaroni
  • 2 eggs, beaten
  • 2 Tbsp. flour
  • 1 c. pineapple juice, drained from pineapple chunks
  • 1 c. sugar
  • 1/2 tsp. salt
  • 1 c. small marshmallows
  • 1 small carton Cool Whip (4 oz.)

Method

  • Cook macaroni according to package directions.
  • Cook eggs, flour, pineapple juice, sugar and salt until thick; cool.
  • Combine this mixture and macaroni, rinsing macaroni before mixing.
  • Cool in refrigerator overnight.
  • Next day, add 20 ounce pineapple chunks (which were drained).
  • Add marshmallows and Cool Whip.
