- 2 Tbsp. oil
- 1/2 c. chopped onion
- 2 Tbsp. minced garlic
- 12 black olives
- 1/4 c. chopped peppers
- 1 c. canned corn
- 3/4 c. water or liquid from corn
- 1 c. garbanzo beans with liquid
- 1/4 tsp. basil and oregano
- 1 3/4 c. tomatoes
- 1/2 c. grated cheese
- 1 c. cornmeal
Method
- Saute onion, garlic and peppers.
- Add water and bring to a boil, then add cornmeal and beans with liquid.
- Mix in the remaining ingredients.
- Bake at 375° for 25 minutes.
