Ingredients
- 1 bag assorted beans (5 to 7 variety beans)
- 1 Tbsp. salt
- ham or ham hocks (can be omitted)
- 1 large onion, chopped
- 1 can tomatoes
- 1 tsp. chili powder
- juice of 1 lemon
- freshly ground pepper to taste
Method
- Wash beans.
- Place in large kettle.
- Cover with 2 inches water; add salt.
- Soak overnight.
- Drain, rinse and add 2 quarts water and ham or ham hocks.
- Bring to a boil and simmer slowly 3 hours.
- (Or, wash beans and slowly drop into 2 quarts of boiling water so that the water does not stop boiling; reduce heat and simmer 3 hours.)
