Ingredients

  • 1 bag assorted beans (5 to 7 variety beans)
  • 1 Tbsp. salt
  • ham or ham hocks (can be omitted)
  • 1 large onion, chopped
  • 1 can tomatoes
  • 1 tsp. chili powder
  • juice of 1 lemon
  • freshly ground pepper to taste

Method

  • Wash beans.
  • Place in large kettle.
  • Cover with 2 inches water; add salt.
  • Soak overnight.
  • Drain, rinse and add 2 quarts water and ham or ham hocks.
  • Bring to a boil and simmer slowly 3 hours.
  • (Or, wash beans and slowly drop into 2 quarts of boiling water so that the water does not stop boiling; reduce heat and simmer 3 hours.)
