Ingredients

  • 1 lb. squid, cleaned
  • 1/2 c. flour
  • 1 c. olive oil (more if needed)
  • salt and pepper to taste
  • lemon wedges

Method

  • Cut
  • squid
  • into
  • rings or 3-inch pieces.
  • If tentacles are large,
  • cut
  • in half.
  • Toss the squid in flour mixed with salt and
  • pepper;
  • coat
  • as
  • you
  • are
  • frying, to avoid flour getting soggy.
  • In a skillet, heat enough oil to measure about 1
  • to
  • 1 1/2
  • inches
  • deep.
  • When
  • the oil is hot, add squid. Lower
  • heat just
  • little
  • and
  • continue to fry squid until nicely
  • golden. Drain on paper towels.
  • The squid should cook in
  • to 3 minutes. Place fried squid on platter and garnish with lemon wedges. Makes 2 servings.
