Ingredients
- 1 lb. squid, cleaned
- 1/2 c. flour
- 1 c. olive oil (more if needed)
- salt and pepper to taste
- lemon wedges
Method
- Cut
- squid
- into
- rings or 3-inch pieces.
- If tentacles are large,
- cut
- in half.
- Toss the squid in flour mixed with salt and
- pepper;
- coat
- as
- you
- are
- frying, to avoid flour getting soggy.
- In a skillet, heat enough oil to measure about 1
- to
- 1 1/2
- inches
- deep.
- When
- the oil is hot, add squid. Lower
- heat just
- little
- and
- continue to fry squid until nicely
- golden. Drain on paper towels.
- The squid should cook in
- to 3 minutes. Place fried squid on platter and garnish with lemon wedges. Makes 2 servings.
