Ingredients
- 1 medium sized eggplant
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. all-purpose flour
- oil (enough to make 1 inch deep in skillet)
Method
- Peel and slice eggplant.
- Mix flour, salt and pepper.
- Cover eggplant with flour mixture.
- Drop into hot skillet of oil and fry until brown on one side.
- Turn and fry until crisp; remove from oil and drain.
- Garnish with sliced red ripe tomatoes.
