Ingredients

  • 1 medium fryer, cut up
  • 3 to 4 c. vegetable oil
  • salt and pepper
  • 1 Tbsp. paprika
  • 1 c. flour

Method

  • Put oil in a large skillet, preferably cast-iron.
  • Heat on medium to high heat.
  • Salt chicken slightly.
  • In a medium size brown paper bag, put flour, a little salt and paprika.
  • Shake well. Put in 4 or 5 pieces of chicken and shake to coat well.
  • Test oil by dropping in a pinch of flour.
  • If it sizzles, put in the chicken.
  • Fry until light brown on bottom side.
  • Turn and continue frying until color is uniform, about 15 minutes per side.
  • Remove to paper towels and drain oil.
  • Serve hot or cold.
