Ingredients
- 1 medium fryer, cut up
- 3 to 4 c. vegetable oil
- salt and pepper
- 1 Tbsp. paprika
- 1 c. flour
Method
- Put oil in a large skillet, preferably cast-iron.
- Heat on medium to high heat.
- Salt chicken slightly.
- In a medium size brown paper bag, put flour, a little salt and paprika.
- Shake well. Put in 4 or 5 pieces of chicken and shake to coat well.
- Test oil by dropping in a pinch of flour.
- If it sizzles, put in the chicken.
- Fry until light brown on bottom side.
- Turn and continue frying until color is uniform, about 15 minutes per side.
- Remove to paper towels and drain oil.
- Serve hot or cold.
