Ingredients
- 1 chicken, cut up
- 1/4 c. olive oil
- 1 c. dry white wine
- 4 tomatoes, peeled and seeded
- 2 whole cloves garlic
- salt and pepper
Method
- Cut up the chicken and brown the pieces on all sides in hot oil.
- Remove chicken and deglaze the pan by pouring the wine into it and, with a wooden spoon over medium heat, rubbing down all the good brown substances into the liquid in the skillet.
- Then add the tomatoes and garlic.
- Simmer until this sauce is somewhat reduced.
- Season with salt and pepper to taste.
