Ingredients

  • 1 chicken, cut up
  • 1/4 c. olive oil
  • 1 c. dry white wine
  • 4 tomatoes, peeled and seeded
  • 2 whole cloves garlic
  • salt and pepper

Method

  • Cut up the chicken and brown the pieces on all sides in hot oil.
  • Remove chicken and deglaze the pan by pouring the wine into it and, with a wooden spoon over medium heat, rubbing down all the good brown substances into the liquid in the skillet.
  • Then add the tomatoes and garlic.
  • Simmer until this sauce is somewhat reduced.
  • Season with salt and pepper to taste.
