Ingredients

  • Butter, for baking dish
  • 4 cups milk
  • 1 1/2 cups quick cooking grits
  • 1/4 pound plus 4 tablespoons unsalted butter
  • 1 1/2 teaspoons salt
  • Dash of hot pepper sauce
  • 1 1/2 cups grated cheddar or rat cheese
  • 3 eggs, well-beaten
  • Butter, for frying
  • Large rectangular ovenproof baking dish

Method

  • Butter the baking dish, set aside.
  • Preheat the oven to 350.
  • In a large saucepan, bring the milk and 2 cups water to a boil over high heat.
  • Pour in the grits, stirring constantly until moistened.
  • Remove from the heat and stir in the butter, seasonings, cheese and eggs.
  • Pour into the prepared baking dish and bake for 1 hour.
  • Let cool to room temperature and cut into diamond shapes.
  • Pan fry in butter until golden on both sides.
