Ingredients

  • 1 qt. fresh strawberries
  • 3 oz. cream cheese
  • 1 Tbsp. coffee creamer
  • 1 c. sugar
  • 3 Tbsp. cornstarch
  • 1 baked pie shell

Method

  • Pick and wash berries and put aside on paper towels to dry. Cream together the cheese and coffee creamer and spread evenly in bottom of baked pie shell.
  • Place the biggest, nicest berries, points up, in the shell (this will take about half the berries). Put in refrigerator to chill while preparing the glaze.
  • Crush remaining berries and add water to make 1 1/2 cups berries and juice.
  • Add sugar blended with cornstarch and cook over low heat until thick, stirring constantly.
  • Add enough red food coloring to give deep color and cook 2 minutes longer.
  • Cool.
  • Pour over berries in crust and chill until ready to serve.
  • Serve with whipped cream.
