Ingredients

  • 3-large peeled cucumbers, seeds removed and sliced thinly on the diagonal.
  • 1 medium white onion, sliced thin
  • 1 bunch green onions, sliced thin
  • 2 garlic cloves, pressed or minced fine
  • 1/4 cup toasted sesame oil
  • 2 tablespoons toasted sesame seeds
  • 2 tablespoons New Mexico ground red chile
  • 2 tablespoon rice vinegar or fresh lime juice
  • 2 tablespoons honey

Method

  • Placed sliced cucumbers in bowl and sprinkle with salt. Set aside for 5 minues
  • Mix all remaining ingredients in large bowl.
  • Drain the cucumbers well and press out as much liquid as possible.
  • Add to bowl and toss until cucumbers are well coated. Refrigerate 1 hour before serving
