Ingredients
- 3-large peeled cucumbers, seeds removed and sliced thinly on the diagonal.
- 1 medium white onion, sliced thin
- 1 bunch green onions, sliced thin
- 2 garlic cloves, pressed or minced fine
- 1/4 cup toasted sesame oil
- 2 tablespoons toasted sesame seeds
- 2 tablespoons New Mexico ground red chile
- 2 tablespoon rice vinegar or fresh lime juice
- 2 tablespoons honey
Method
- Placed sliced cucumbers in bowl and sprinkle with salt. Set aside for 5 minues
- Mix all remaining ingredients in large bowl.
- Drain the cucumbers well and press out as much liquid as possible.
- Add to bowl and toss until cucumbers are well coated. Refrigerate 1 hour before serving
