Ingredients

  • 3/4 c. shortening
  • 1 1/2 c. sugar
  • 2 1/4 c. sifted cake flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. milk
  • 1 tsp. vanilla
  • Custard Filling (recipe follows)
  • Snow Peak Frosting (recipe follows)
  • 2 c. grated fresh coconut
  • 2 c. milk
  • 1/2 c. sugar
  • 4 egg yolks
  • 1/3 c. cornstarch
  • 1 tsp. orange flavoring
  • 1 c. grated fresh coconut

Method

  • Combine first 4 ingredients in a heavy saucepan; stir with a wire whisk until well blended.
  • Cook over medium heat, stirring constantly, until thickened and smooth.
  • Stir in flavoring.
  • Chill thoroughly.
  • Stir in coconut.
