- 3/4 c. shortening
- 1 1/2 c. sugar
- 2 1/4 c. sifted cake flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. milk
- 1 tsp. vanilla
- Custard Filling (recipe follows)
- Snow Peak Frosting (recipe follows)
- 2 c. grated fresh coconut
- 2 c. milk
- 1/2 c. sugar
- 4 egg yolks
- 1/3 c. cornstarch
- 1 tsp. orange flavoring
- 1 c. grated fresh coconut
Method
- Combine first 4 ingredients in a heavy saucepan; stir with a wire whisk until well blended.
- Cook over medium heat, stirring constantly, until thickened and smooth.
- Stir in flavoring.
- Chill thoroughly.
- Stir in coconut.
