Ingredients
- 2 c. fresh blueberries, washed and picked over
- 1/4 c. light corn syrup
- 1/4 c. granulated sugar
- 1/2 c. water
- generous squeeze fresh lemon juice
Method
- Place all ingredients in a large glass bowl. Stir to blend. Lightly cover bowl with waxed paper.
- Microwave on High for 3 minutes or until mixture boils.
- Microwave at a simmer for an additional 5 minutes.
- Let cool. Store in a covered jar in the refrigerator. This thickens as it cools.
- Makes 1 1/2 cups.
