Ingredients
- 2 c. flour
- 2/3 c. butter
- 2 eggs, separated
- 1 1/2 c. sugar
- 1 tsp. salt
- 1 c. milk
- 2 tsp. baking powder
- 1 c. fresh blueberries
Method
- Sift together flour and sugar.
- Cut in butter until particles are size of small peas.
- Save 3/4 cup of this mixture for crumb topping.
- Add baking powder, salt, 2 egg yolks and 1 cup milk to mixture.
- Beat at low speed for 3 minutes.
- Beat 2 egg whites until stiff.
- Fold gently into batter.
- Spread in oblong pan. Arrange blueberries over batter.
- Sprinkle with reserved mixture. Bake at 350° for 40 minutes.
