Ingredients

  • 2 c. flour
  • 2/3 c. butter
  • 2 eggs, separated
  • 1 1/2 c. sugar
  • 1 tsp. salt
  • 1 c. milk
  • 2 tsp. baking powder
  • 1 c. fresh blueberries

Method

  • Sift together flour and sugar.
  • Cut in butter until particles are size of small peas.
  • Save 3/4 cup of this mixture for crumb topping.
  • Add baking powder, salt, 2 egg yolks and 1 cup milk to mixture.
  • Beat at low speed for 3 minutes.
  • Beat 2 egg whites until stiff.
  • Fold gently into batter.
  • Spread in oblong pan. Arrange blueberries over batter.
  • Sprinkle with reserved mixture. Bake at 350° for 40 minutes.
