- 4 large onions
- 3 Tbsp. butter
- 2 Tbsp. flour
- fresh pepper
- 1/4 tsp. garlic powder
- 1 tsp. sugar
- 1/4 tsp. parsley
- 1/8 tsp. thyme
- 2 (10 1/2 oz.) cans beef consomme
- 1 c. dry white wine
- cognac
- seasoned croutons
- 1/2 lb. Cheddar cheese, shredded or sliced Provolone
Method
- Slice and chop onions.
- Saute in butter until limp.
- Sprinkle with flour, pepper, garlic powder, sugar, parsley and thyme.
- Cook until golden brown.
- Add enough water to consomme to make 1 quart. Combine with onion mixture and add wine; simmer 45 minutes.
- At the last minute, stir in cognac (no more than 2 tablespoons).
