Ingredients

  • 4 large onions
  • 3 Tbsp. butter
  • 2 Tbsp. flour
  • fresh pepper
  • 1/4 tsp. garlic powder
  • 1 tsp. sugar
  • 1/4 tsp. parsley
  • 1/8 tsp. thyme
  • 2 (10 1/2 oz.) cans beef consomme
  • 1 c. dry white wine
  • cognac
  • seasoned croutons
  • 1/2 lb. Cheddar cheese, shredded or sliced Provolone

Method

  • Slice and chop onions.
  • Saute in butter until limp.
  • Sprinkle with flour, pepper, garlic powder, sugar, parsley and thyme.
  • Cook until golden brown.
  • Add enough water to consomme to make 1 quart. Combine with onion mixture and add wine; simmer 45 minutes.
  • At the last minute, stir in cognac (no more than 2 tablespoons).
