Ingredients

  • 1 qt. shredded cabbage
  • 1/2 c. shredded green pepper
  • 2 1/2 Tbsp. canned pimento
  • 2 c. water
  • 2 tsp. salt
  • 1 c. sugar
  • 1/2 c. vinegar
  • 1/2 c. water
  • 1 tsp. mustard seed
  • 1 c. thinly sliced celery

Method

  • Soak cabbage, green pepper and pimento in the water and salt. Leave for 1/2 hour. Bring to boil sugar, vinegar, water and mustard seed to make a syrup; cool. Drain cabbage; add celery and combine with syrup. Refrigerate at least 24 hours before serving. Keeps in refrigerator for 2 weeks or can be frozen.
