Ingredients

  • 2 egg yolks, beaten
  • 3 Tbsp. prepared mustard
  • 1 Tbsp. water
  • 1 Tbsp. butter
  • 1/2 c. whipping cream, whipped
  • 1 Tbsp. sugar
  • 2 Tbsp. vinegar
  • 3/4 tsp. salt
  • 1 Tbsp. prepared horseradish

Method

  • Place eggs in a bowl and add sugar, mustard, vinegar, water and salt.
  • Mix well.
  • Pour mixture into a double boiler and cook, stirring constantly, until mixture thickens, about 4 to 5 minutes. Remove from heat. Blend in butter and horseradish. Cool thoroughly. Fold in whipped cream. Serve with warm meat.
  • Remove from refrigerator 30 minutes before serving.
