Ingredients

  • 1 lb. bulk pork sausage
  • 1 medium onion, chopped
  • 1 c. chopped celery or peppers
  • 1 (28 oz.) can diced tomatoes, drained
  • 2 1/2 c. water
  • 1 1/4 c. uncooked long grain rice
  • 1/2 c. chili sauce or salsa
  • 1 1/2 c. (6 oz.) shredded sharp Cheddar cheese

Method

  • In a skillet, cook sausage, onion and celery or peppers over medium heat, until meat is no longer pink and vegetables are tender; drain. Add tomatoes, water, rice and chili or salsa sauce. Cover and cook over low heat for 30 minutes or until rice is tender. Remove from the heat. Sprinkle with cheese. Cover and let stand for 5 minutes or until cheese is melted.
