Ingredients
- 1/3 cup sugar-free orange marmalade
- 2 Tablespoons unsweetened orange juice
- 1/4 teaspoon ground ginger
- 1/3 cup green onions, sliced
- 6 oz flounder or roughy filets
Method
- Combine first 3 ingredients in a small pan.
- Cover and cook over medium heat until marmalade melts, stirring often.
- Remove from heat and stir in onions.
- Place fish in baking dish coated with pam.
- Spoon marmalade mixture evenly over filets.
- Bake at 400 for 10 minutes until fish flakes when tested.
- Single serving.
