Ingredients

  • 1/3 cup sugar-free orange marmalade
  • 2 Tablespoons unsweetened orange juice
  • 1/4 teaspoon ground ginger
  • 1/3 cup green onions, sliced
  • 6 oz flounder or roughy filets

Method

  • Combine first 3 ingredients in a small pan.
  • Cover and cook over medium heat until marmalade melts, stirring often.
  • Remove from heat and stir in onions.
  • Place fish in baking dish coated with pam.
  • Spoon marmalade mixture evenly over filets.
  • Bake at 400 for 10 minutes until fish flakes when tested.
  • Single serving.
