Ingredients
- 2 lb. beef stew cubes
- 6 carrots
- 1 green pepper
- 4 potatoes
- 5 sticks celery
- 1 onion
- 2 c. tomato or V-8 juice
- 3 tsp. salt
- 1/2 tsp. pepper
- 5 Tbsp. tapioca
- 1 Tbsp. sugar
Method
- Don't brown the beef cubes.
- Cut the vegetables into chunks; dice the onion.
- Mix all ingredients well and put into a Dutch oven or a roaster.
- Cover tightly.
- Bake at 250° for 5 hours. Don't peek; don't stir.
- Serve with hot biscuits.
- Vegetable can be varied.
- Can be put into a crock-pot on low for 8 hours.
