Ingredients
- 1 1/3 lbs mixed tuna, swordfish, snapper, and/or cod, cut into 1 inch chunks
- 12 None small shallots, halved
- 1 None large red pepper, deseeded and chopped coarsely
- 1 None large yellow pepper, deseeded and chopped coarsely
- 2 None medium zucchini, sliced thickly
- 1/4 cup extra virgin olive oil
- 1 tbsp dried oregano
- None None Flat-leaf parsley, chopped (optional)
Method
- Thread the fish and vegetables, alternating, onto skewers.
- Combine the oil and oregano in a small bowl.
- Cook the skewers on heated oiled grill or grill pan, basting with oil mixture, for about 5 mins or until browned all over and just cooked through. Sprinkle with parsley, if desired.
