- 5 to 6 lb. chicken thighs
- 1/2 c. flour
- 4 Tbsp. margarine
- 4 Tbsp. oil
- 8 Tbsp. lemon juice
- 4 Tbsp. honey
- 1 Tbsp. soy sauce
- 1 tsp. ginger
- 2 (11 oz.) mandarin oranges
- 1 c. orange juice
- cornstarch
Method
- Coat chicken with flour.
- In skillet, heat oil and margarine; brown the chicken.
- Drain off fat.
- Drain mandarin oranges saving juice.
- Mix juice with lemon juice, honey, soy sauce, orange juice and ginger.
- Pour sauce over chicken, cover and simmer 45 minutes or until tender.
- Remove chicken, thicken with cornstarch.
- Add chicken and mandarin oranges.
- Serve over rice.
