Ingredients

  • 5 to 6 lb. chicken thighs
  • 1/2 c. flour
  • 4 Tbsp. margarine
  • 4 Tbsp. oil
  • 8 Tbsp. lemon juice
  • 4 Tbsp. honey
  • 1 Tbsp. soy sauce
  • 1 tsp. ginger
  • 2 (11 oz.) mandarin oranges
  • 1 c. orange juice
  • cornstarch

Method

  • Coat chicken with flour.
  • In skillet, heat oil and margarine; brown the chicken.
  • Drain off fat.
  • Drain mandarin oranges saving juice.
  • Mix juice with lemon juice, honey, soy sauce, orange juice and ginger.
  • Pour sauce over chicken, cover and simmer 45 minutes or until tender.
  • Remove chicken, thicken with cornstarch.
  • Add chicken and mandarin oranges.
  • Serve over rice.
