Ingredients
- 6 lb. figs
- 3 lb. sugar
- 1/4 c. soda
- 1 large lemon
Method
- Wash figs and add soda.
- Cover with hot water; let stand 5 minutes, then rinse well.
- Add sugar and start cooking.
- Add juice of lemon and cut peeling into small slices.
- Cook 30 minutes first day and then set aside.
- Cook 30 minutes second day and then set aside.
- Cook 30 minutes third day or until desired thickness and syrup will be clear.
- Seal when hot in hot jars, using paraffin to cover preserves before applying lid.
