Ingredients

  • 6 lb. figs
  • 3 lb. sugar
  • 1/4 c. soda
  • 1 large lemon

Method

  • Wash figs and add soda.
  • Cover with hot water; let stand 5 minutes, then rinse well.
  • Add sugar and start cooking.
  • Add juice of lemon and cut peeling into small slices.
  • Cook 30 minutes first day and then set aside.
  • Cook 30 minutes second day and then set aside.
  • Cook 30 minutes third day or until desired thickness and syrup will be clear.
  • Seal when hot in hot jars, using paraffin to cover preserves before applying lid.
