- 2 tbsp olive oil
- 3 tbsp lime juice
- 3/4 tsp lime zest
- 1 tbsp fresh mint leaves, chopped
- 1 tbsp fresh cilantro leaves, chopped
- 2 cups julienned bell peppers
- 1 cup julienned jicama
- 1 cup julienned seedless cucumber
- 1/4 cup shredded carrot
- 1/4 cup thinly sliced scallions
- 3 tbsp vegetable oil
- 2 tbsp Cajun seasoning blend
- 6 (6 oz) cod fillets
- 2 cloves garlic, minced
- 10 oz baby spinach or arugula
Method
- Preheat grill. Whisk together 1 tbsp olive oil, 1 tbsp lime juice, 1/4 tsp lime zest and herbs. Add vegetables and scallions. Toss gently to coat. Season then set aside.
- Whisk together vegetable oil, Cajun seasoning blend and remaining lime juice and lime zest. Brush 1/2 mixture over cod fillets and grill for 8 mins, or until fish flakes easily with fork, brushing with remaining seasoning mixture.
- Meanwhile, in a large frying pan, heat remaining olive oil over medium-high heat. Cook garlic for 1 min. Add baby spinach and cook for 1 min, or until just wilted. Season. Transfer to a serving platter and top with cod fillets. Serve with coleslaw.
