Ingredients

  • 2 tbsp olive oil
  • 3 tbsp lime juice
  • 3/4 tsp lime zest
  • 1 tbsp fresh mint leaves, chopped
  • 1 tbsp fresh cilantro leaves, chopped
  • 2 cups julienned bell peppers
  • 1 cup julienned jicama
  • 1 cup julienned seedless cucumber
  • 1/4 cup shredded carrot
  • 1/4 cup thinly sliced scallions
  • 3 tbsp vegetable oil
  • 2 tbsp Cajun seasoning blend
  • 6 (6 oz) cod fillets
  • 2 cloves garlic, minced
  • 10 oz baby spinach or arugula

Method

  • Preheat grill. Whisk together 1 tbsp olive oil, 1 tbsp lime juice, 1/4 tsp lime zest and herbs. Add vegetables and scallions. Toss gently to coat. Season then set aside.
  • Whisk together vegetable oil, Cajun seasoning blend and remaining lime juice and lime zest. Brush 1/2 mixture over cod fillets and grill for 8 mins, or until fish flakes easily with fork, brushing with remaining seasoning mixture.
  • Meanwhile, in a large frying pan, heat remaining olive oil over medium-high heat. Cook garlic for 1 min. Add baby spinach and cook for 1 min, or until just wilted. Season. Transfer to a serving platter and top with cod fillets. Serve with coleslaw.
