Ingredients
- 20 large raw shrimp
- 2 cloves garlic, minced and crushed
- 1 Tbsp. chopped shallots or onion
- pepper to taste
- sprinkle of salt (optional)
- 8 Tbsp. butter (1/4 lb.)
- 3/4 c. white wine
- 1 1/2 Tbsp. lemon juice
- chopped parsley
- 1 (6 oz.) box Uncle Ben's long grain and wild rice, prepared by package directions
Method
- Saute shrimp in 5 tablespoons butter until pink.
- Add garlic, shallots and pepper.
- When shrimp is done (4 to 5 minutes, until barely transparent), add remaining butter.
- As it melts, stir in wine slowly, mixing until it emulsifies.
- Add lemon juice and parsley.
- Serve over rice.
- Makes 4 servings.
- Can be cut in half for two.
