Ingredients

  • 20 large raw shrimp
  • 2 cloves garlic, minced and crushed
  • 1 Tbsp. chopped shallots or onion
  • pepper to taste
  • sprinkle of salt (optional)
  • 8 Tbsp. butter (1/4 lb.)
  • 3/4 c. white wine
  • 1 1/2 Tbsp. lemon juice
  • chopped parsley
  • 1 (6 oz.) box Uncle Ben's long grain and wild rice, prepared by package directions

Method

  • Saute shrimp in 5 tablespoons butter until pink.
  • Add garlic, shallots and pepper.
  • When shrimp is done (4 to 5 minutes, until barely transparent), add remaining butter.
  • As it melts, stir in wine slowly, mixing until it emulsifies.
  • Add lemon juice and parsley.
  • Serve over rice.
  • Makes 4 servings.
  • Can be cut in half for two.
