Ingredients

  • 1/2 lb. mushrooms, sliced
  • 2 cloves garlic, minced
  • 3/4 c. Parmesan cheese, grated
  • 1 lb. Colavita flavored egg fettuce
  • 1 c. Fontinella, grated
  • 1/4 c. butter
  • 1/4 c. flour
  • 2 c. milk
  • dash of pepper

Method

  • In a saucepan, saute 2 tablespoons butter with garlic and mushrooms until soft.
  • Set aside.
  • In another saucepan melt 1/4 cup butter; stir in flour to make paste.
  • Slowly stir in milk. Remove from heat.
  • Stir in mushrooms, pepper, fontinella and 1/2 of the Parmesan cheese.
  • Pour over cooked fettuce.
  • Top with rest of grated Parmesan cheese.
