Ingredients

  • 8 ounces fettuccine, uncooked
  • 1/4 cup water
  • 1 (16-ounce) package frozen broccoli, cauliflower, and carrots
  • 1 cup skim milk
  • 1/2 cup grated Romano cheese
  • 8 (3/4-ounce) slices ham, cut into 1/2-inch squares
  • 1/2 teaspoon pepper

Method

  • 1) Cook fettuccine according to package directions, omitting salt and fat; drain. Place in a large bowl, and keep warm.
  • 2) Bring 1/4 cup water to a boil in a medium saucepan. Add vegetables; cook, uncovered, 3 minutes or until vegetables are crisp-tender. Drain vegetables. Set aside, and keep warm.
  • 3) Place milk in a small saucepan; cook over low heat until warm. Add warm milk and cheese to pasta; stir until thoroughly heated. Stir in vegetables, ham, and pepper. Serve warm.
