- 2 1/2 c. all-purpose flour
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 3 beaten eggs
- 1/2 c. cooking oil
- 1/2 c. milk
- 2 c. shredded carrots
- 1 (3 1/2 oz.) can flaked coconut (about 1 1/3 c.)
- 1/2 c. chopped maraschino cherries
- 1/2 c. raisins
- 1/2 c. chopped pecans
Method
- Stir together thoroughly the flour, sugar, baking powder, soda, cinnamon and salt.
- Combine eggs, oil and milk, then add this to the flour mixture and stir until blended.
- Stir in carrots, coconut, cherries, raisins and pecans.
- Turn into four well-greased and floured 16 ounce fruit or vegetable cans.
- Bake at 350° for 45 to 50 minutes.
- Remove from cans and allow to completely cool. Store wrapped in foil; refrigerate.
