Ingredients

  • 2 1/2 c. all-purpose flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 3 beaten eggs
  • 1/2 c. cooking oil
  • 1/2 c. milk
  • 2 c. shredded carrots
  • 1 (3 1/2 oz.) can flaked coconut (about 1 1/3 c.)
  • 1/2 c. chopped maraschino cherries
  • 1/2 c. raisins
  • 1/2 c. chopped pecans

Method

  • Stir together thoroughly the flour, sugar, baking powder, soda, cinnamon and salt.
  • Combine eggs, oil and milk, then add this to the flour mixture and stir until blended.
  • Stir in carrots, coconut, cherries, raisins and pecans.
  • Turn into four well-greased and floured 16 ounce fruit or vegetable cans.
  • Bake at 350° for 45 to 50 minutes.
  • Remove from cans and allow to completely cool. Store wrapped in foil; refrigerate.
