Ingredients

  • 1/2 tsp. lemon pepper
  • 1/2 tsp. garlic powder
  • 1 1/4 lb. boneless chicken breasts, in 1/2-inch cubes
  • 3 Tbsp. oil
  • 1 c. chopped onion
  • 12 oz. smoked Polish or kielbasa sausage, cut in 1/2-inch slices
  • 16 oz. jar picante sauce
  • 14 1/2 oz. can stewed tomatoes
  • 15 oz. can LeSueur peas, drained
  • 2 2/3 c. hot, cooked instant rice

Method

  • Sprinkle lemon pepper and garlic powder over chicken cubes. Heat oil in large skillet.
  • Cook chicken in oil 5 minutes or until done.
  • Add onions and sausage; cook additional 5 minutes.
  • Keep stirring.
  • Stir in picante sauce and tomatoes.
  • Reduce heat to medium; cook 12 minutes.
  • Add peas; cook additional 2 or 3 minutes or until heated through.
  • Serve over cooked rice.
  • Makes 4 (1-cup) servings.
