Ingredients

  • 1/2 cups Chopped Walnuts Or Pecans
  • 1 bag (6 To 9 Oz. Bag) Dole Spinach
  • 1/3 cups Dried Cherries
  • 1/2 cups Crumbled Blue Cheese
  • 2 whole Tomatoes, Washed And Chopped
  • 1/2 ounces, weight Thinly Sliced Red Onion
  • 2 Tablespoons Red Raspberry Jam With Seeds
  • 2 Tablespoons Red Wine Vinegar
  • 1/3 cups Olive Oil
  • Salt And Pepper, to taste

Method

  • Preheat oven to 375 degrees F (190 degrees C). Arrange walnuts or pecans in a single layer on a baking sheet. Toast in the oven for 5 to 6 minutes, or until nuts begin to brown. Take out and set aside.
  • In a large bowl, toss together the spinach, walnuts/pecans, cherries, blue cheese, tomatoes, and red onion.
  • In a small bowl, whisk together jam, vinegar, olive oil, pepper, and salt. Pour over the salad just before serving, and toss to coat.
