- 3 lb. total ground sirloin, ground veal and mild Italian sausage or ground pork (equal portions of each)
- 2 large eggs, slightly beaten
- 1/3 c. diced green pepper
- 5 Tbsp. red wine (Burgundy or Port)
- 1/4 c. diced onion
- 2 Tbsp. Worcestershire sauce
- 3 Tbsp. ketchup
- 3 Tbsp. tomato paste
- 1/3 to 1/2 c. bread crumbs (just enough to form a solid ball)
- 1/8 tsp. each thyme, marjoram and paprika
- salt and pepper if desired
Method
- Preheat oven to 350°.
- Oil a 9 1/4 x 5 1/4 x 2 3/4-inch or similar size loaf pan and dust with grated Parmesan or Romano cheese.
- Combine all ingredients very well in a large bowl and form into a ball.
- If mixture does not form well, keep adding bread crumbs a tablespoon at time until formed.
- Spread out evenly in pan.
- Cover with foil and bake for 20 minutes.
- Uncover and bake another 15 to 20 minutes or until meat has shrunken from the sides.
