Ingredients

  • 3 lb. total ground sirloin, ground veal and mild Italian sausage or ground pork (equal portions of each)
  • 2 large eggs, slightly beaten
  • 1/3 c. diced green pepper
  • 5 Tbsp. red wine (Burgundy or Port)
  • 1/4 c. diced onion
  • 2 Tbsp. Worcestershire sauce
  • 3 Tbsp. ketchup
  • 3 Tbsp. tomato paste
  • 1/3 to 1/2 c. bread crumbs (just enough to form a solid ball)
  • 1/8 tsp. each thyme, marjoram and paprika
  • salt and pepper if desired

Method

  • Preheat oven to 350°.
  • Oil a 9 1/4 x 5 1/4 x 2 3/4-inch or similar size loaf pan and dust with grated Parmesan or Romano cheese.
  • Combine all ingredients very well in a large bowl and form into a ball.
  • If mixture does not form well, keep adding bread crumbs a tablespoon at time until formed.
  • Spread out evenly in pan.
  • Cover with foil and bake for 20 minutes.
  • Uncover and bake another 15 to 20 minutes or until meat has shrunken from the sides.
