Ingredients
- 12 corn tortillas
- 1 lb. ground chuck
- 1/2 lb. American cheese
- 2 cans enchilada sauce (mild or hot)
- 1 large onion
Method
- Brown ground chuck in frying pan.
- Add salt and pepper to taste.
- Soften tortillas in frying pan with small amount of oil. Grate cheese; dice onion and take softened tortillas and add chuck, cheese and onion.
- Roll into a cylinder.
- Place in baking pan.
- Surplus cheese and onion, place on top of tortillas.
- Pour contents of sauce on top.
- Bake at 325° for 30 minutes.
- Serves 4.
