Ingredients

  • 12 corn tortillas
  • 1 lb. ground chuck
  • 1/2 lb. American cheese
  • 2 cans enchilada sauce (mild or hot)
  • 1 large onion

Method

  • Brown ground chuck in frying pan.
  • Add salt and pepper to taste.
  • Soften tortillas in frying pan with small amount of oil. Grate cheese; dice onion and take softened tortillas and add chuck, cheese and onion.
  • Roll into a cylinder.
  • Place in baking pan.
  • Surplus cheese and onion, place on top of tortillas.
  • Pour contents of sauce on top.
  • Bake at 325° for 30 minutes.
  • Serves 4.
