- 2 cups almond flour (not almond meal)
- 1/4 cup coconut flour
- 3 egg whites
- 1/2 cup applesauce
- 1/4 cup coconut oil
- 3 tbsp honey
- 1/2 tsp lemon extract (*you can substitute with vanilla)
- 1/2 cup fresh lemon juice
- zest of 1 large lemon
- 1 1/2 teaspoon baking
- 1 1/2 teaspoon baking powder
- dash of sea salt
Method
- Preheat oven 350 degrees
- Prepare a baking pan with nonstick cooking spray
- In a small bowl, combine wet ingredients
- In a large mixing bowl, combine dry ingredients
- Add the wet to the dry and combine until smooth
- Bake 50 minutes until golden brown
- Remove from the oven & allow to cool 30 minutes before removing from the pan
- Cool on rack another hour before serving
