Ingredients

  • 2 cups almond flour (not almond meal)
  • 1/4 cup coconut flour
  • 3 egg whites
  • 1/2 cup applesauce
  • 1/4 cup coconut oil
  • 3 tbsp honey
  • 1/2 tsp lemon extract (*you can substitute with vanilla)
  • 1/2 cup fresh lemon juice
  • zest of 1 large lemon
  • 1 1/2 teaspoon baking
  • 1 1/2 teaspoon baking powder
  • dash of sea salt

Method

  • Preheat oven 350 degrees
  • Prepare a baking pan with nonstick cooking spray
  • In a small bowl, combine wet ingredients
  • In a large mixing bowl, combine dry ingredients
  • Add the wet to the dry and combine until smooth
  • Bake 50 minutes until golden brown
  • Remove from the oven & allow to cool 30 minutes before removing from the pan
  • Cool on rack another hour before serving
