Ingredients

  • 1 pkg. Lawry's enchilada seasoning
  • 1 pkg. skinned chicken breast
  • 2 chopped tomatoes
  • 1/2 chopped onion
  • 1 can olives, sliced
  • 1 pkg. grated Jack cheese
  • 1 pkg. corn tortillas

Method

  • Mix onions and cheese.
  • Cut up boiled chicken.
  • Dip tortillas into enchilada sauce (prepared according to package directions). Fill with chicken, cheese, onions, tomatoes and olives.
  • Roll up and put in greased 9 x 13-inch pan.
  • Pour the remaining sauce over top and sprinkle with grated Jack cheese.
  • Cover with foil and bake 40 to 45 minutes at 350°.
