Ingredients

  • 10 eggs
  • 1 1/2 lb. sugar
  • 1 lb. blanched, slivered almonds, toasted slightly in butter
  • 6 oz. candied orange peel
  • 6 oz. candied citron
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ground cardamon
  • 1/4 tsp. cloves
  • 1/4 tsp. mace
  • grated rind of 1 fresh lemon
  • 1 lb. flour
  • square baking wafers (Backoblaten)

Method

  • Beat well (1 hour by hand, 8 minutes with electric mixer) the eggs and sugar.
  • Add almonds, candied oranges and citron, spices and lemon rind.
  • Add flour a little at a time.
  • Spread the batter 1/2-inch thick on a layer of baking wafers.
  • Let dry overnight. Bake to a light golden brown at 300° (150°C) for 15 to 20 minutes. When cold, coat with white or chocolate icing.
