Ingredients

  • 5 Tbsp. butter
  • 1/2 c. sugar
  • 1 egg, separated
  • 1 1/2 c. flour
  • 2 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 1/2 c. milk

Method

  • Cream butter.
  • Add sugar gradually until fluffy.
  • Blend in egg yolk; mix well.
  • Sift dry ingredients; add to creamed mixture, alternately with milk.
  • Fold in beaten egg white.
  • Fill greased muffin pans 2/3 full.
  • Bake at 325° for 20 to 25 minutes.
  • While hot, dip tops in melted butter, then in mixture of 1/2 cup sugar and 1 teaspoon cinnamon.
