Ingredients

  • 1 eggplant, peeled, sliced 1/4 inch thick lengthwise
  • 4 tablespoons shallots, chopped
  • 4 garlic cloves
  • 1 12 cups tomato and basil pasta sauce
  • 1 tablespoon extra virgin olive oil
  • 6 pieces Laughing Cow light swiss cheese, 6 wedges
  • 10 leaves fresh basil, shredded
  • 12 cup parmesan cheese, grated

Method

  • Peel and Slice Eggplant.
  • Broil eggplant on on baking sheet until golden on both sides (15 mins).
  • Saute shallots & garlic until soft.
  • Add Tomato & Basil Sauce.
  • Transfer to baking dish.
  • Place 1 wedge of cheese and a basil leaf on one end of eggplant slice.
  • Roll up.
  • Lay seam side down in sauce.
  • Top with Parmesan.
  • Bake 10 to 15 minutes.
