Ingredients

  • 1.5 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 3 tablespoons butter, melted and cooled
  • 2 -4quarts chicken broth
  • Salt and pepper to taste

Method

  • Sift together flour, baking soda and salt.
  • Add buttermilk and stir well, forming a soft, wet dough. Then add the butter. You might need to add some extra flour to make the dough more manageable.
  • Kneed dough till firm.
  • Take a small piece of the dough and roll out to a rectangle. It should be almost paper thin. Use plenty of flour to prevent sticking.
  • Cut into 2"x1.5" strips. Repeat with rest of dough.
  • Put dumplings onto wax paper on a cookie sheet. Dust lightly with flour so it doesn't stick.
  • Drop dumplings into boiling broth one at a time. Use a fork to gently push aside dumplings as you drop them into the stock. Cook till done.
  • Serve hot adding cooked chicken before serving.
