Ingredients
- 1 whole Medium Eggplant, Peeled And Diced Into 1" Pieces
- 2 whole Medium Zucchini, Sliced Thinly
- 1 jar 18 Oz Marinara Sauce
- 1/2 whole Cooked Small Cauliflower, Cut Into Pieces
- 1/2 cups Parmesan, Grated
- 1/4 cups Bread Crumbs
Method
- Spray cookie sheet with cooking spray and spread chopped eggplant evenly.
- Spray eggplant.
- Cook in preheated 400F oven for 20 to 25 minutes, until lightly browned and cooked through.
- Mix with zucchini, sauce, and cauliflower.
- Sprinkle with bread crumbs and then Parmesan cheese.
- Bake in a 400F oven, covered, for 15 to 20 minutes or till bubbly.
- Serve as a side dish or over cooked spaghetti as a main dish.
- May be served with a salad and garlic bread.
