Ingredients

  • 1 whole Medium Eggplant, Peeled And Diced Into 1" Pieces
  • 2 whole Medium Zucchini, Sliced Thinly
  • 1 jar 18 Oz Marinara Sauce
  • 1/2 whole Cooked Small Cauliflower, Cut Into Pieces
  • 1/2 cups Parmesan, Grated
  • 1/4 cups Bread Crumbs

Method

  • Spray cookie sheet with cooking spray and spread chopped eggplant evenly.
  • Spray eggplant.
  • Cook in preheated 400F oven for 20 to 25 minutes, until lightly browned and cooked through.
  • Mix with zucchini, sauce, and cauliflower.
  • Sprinkle with bread crumbs and then Parmesan cheese.
  • Bake in a 400F oven, covered, for 15 to 20 minutes or till bubbly.
  • Serve as a side dish or over cooked spaghetti as a main dish.
  • May be served with a salad and garlic bread.
