- 2 medium eggplants
- 1 tsp. salt
- 2 cans tomato sauce
- 1 Tbsp. Italian seasoning
- 3/4 lb. Mozzarella cheese, thinly sliced
- 1/2 lb. mild Cheddar cheese
- 1/4 c. Parmesan cheese
- Italian bread crumbs
- olive oil
- 2 eggs
- 1/2 tsp. pepper
Method
- Slice eggplant 1/4-inch thick.
- Dip slices into bowl with beaten eggs then coat eggplant with mixture of bread crumbs, salt and pepper.
- Fry in hot olive oil.
- When lightly browned remove from oil and drain on paper towels.
