Ingredients
- 8 eggs
- 1/4 c. cooking oil
- 1/2 c. finely chopped fresh chives or scallions
- 2 c. chopped fresh parsley
- 1/2 c. chopped fresh coriander
- 1/4 c. chopped fresh dill
- 1/2 tsp. dried fenugreek
Method
- Break eggs in a large bowl.
- Add 2 tablespoons of oil, salt and pepper.
- Beat well.
- Add chopped herbs and greens.
- Mix well.
