Ingredients
- 2 eggplant, peeled and cubed
- olive oil as needed
- salt
- garlic powder or salt
- 1 (15 oz.) can tomato sauce
- 8 oz. grated Mozzarella cheese (save some for topping)
- 3/4 c. Parmesan cheese
- bread crumbs
- oregano
Method
- Brown eggplant in olive oil, salt, pepper and garlic powder. Drain on paper towels.
- Grease casserole dish.
- Layer eggplant, sauce, Mozzarella cheese and Parmesan cheese (3 layers).
- Top with bread crumbs, oregano and remaining Mozzarella cheese.
- Bake at 350° for 3/4 hour.
