Ingredients

  • 2 eggplant, peeled and cubed
  • olive oil as needed
  • salt
  • garlic powder or salt
  • 1 (15 oz.) can tomato sauce
  • 8 oz. grated Mozzarella cheese (save some for topping)
  • 3/4 c. Parmesan cheese
  • bread crumbs
  • oregano

Method

  • Brown eggplant in olive oil, salt, pepper and garlic powder. Drain on paper towels.
  • Grease casserole dish.
  • Layer eggplant, sauce, Mozzarella cheese and Parmesan cheese (3 layers).
  • Top with bread crumbs, oregano and remaining Mozzarella cheese.
  • Bake at 350° for 3/4 hour.
