Ingredients
- 1 eggplant, peeled and diced
- 2 eggs, beaten
- about 1 c. cracker crumbs (Ritz)
- 2 Tbsp. butter
- salt and pepper
- 1/2 c. onion
- grated cheese (Cheddar is good)
- Worcestershire sauce
- 1 can mushroom soup
Method
- Cook eggplant and onion in salted water until tender; drain. Mix ingredients and top with buttered crumbs.
- Bake at 350° for 30 minutes.
