Ingredients

  • 1 large eggplant
  • 1 raw egg
  • 1/3 stick butter
  • 1/2 pkg. Ritz crackers, crushed
  • dash of Worcestershire sauce
  • 1/3 c. grated cheese
  • 1/3 c. milk
  • 1/2 onion, grated
  • salt and pepper

Method

  • Boil eggplant in skin in salty water until tender.
  • Drain and peel and take out core; mash.
  • Add egg, butter, Worcestershire sauce, cheese, milk, onion, salt and pepper.
  • Mix well.
  • Place in casserole dish and cover with crushed crackers.
  • Dot with butter. Bake 30 minutes at 350°.
