Ingredients
- 1 large eggplant
- 1 raw egg
- 1/3 stick butter
- 1/2 pkg. Ritz crackers, crushed
- dash of Worcestershire sauce
- 1/3 c. grated cheese
- 1/3 c. milk
- 1/2 onion, grated
- salt and pepper
Method
- Boil eggplant in skin in salty water until tender.
- Drain and peel and take out core; mash.
- Add egg, butter, Worcestershire sauce, cheese, milk, onion, salt and pepper.
- Mix well.
- Place in casserole dish and cover with crushed crackers.
- Dot with butter. Bake 30 minutes at 350°.
