Ingredients
- 1 to 2 small eggplants
- 2 Tbsp. butter
- 1/2 c. onion, chopped
- 1 can tomatoes or 5 small chopped fresh tomatoes
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 c. cornbread crumbs
- 1/2 c. milk
- 1/4 lb. grated Cheddar cheese
- 1 stick oleo
Method
- Peel and saute eggplant in 2 tablespoons butter until tender. Drain and mash.
- Mix in order given.
- Pour in a baking dish.
- Bake until brown.
