Ingredients
- 2 large eggs
- 1 cup sugar
- 1 cup eggnog
- 1/2 cup butter or margarine
- 2 teaspoons rum extract
- 1 teaspoon vanilla extract
- 2 1/4 cups flour, all-purpose
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
Method
- Heat oven to 350F (180C).
- Grease bottom only of a 9x5 loaf pan.
- Beat eggs in large bowl.
- Add sugar, eggnog, margarine, rum extract and vanilla.
- Blend well.
- Lightly spoon flour into measuring cup; level off.
- Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened.
- Pour into greased pan.
- Bake for 45 - 50 minutes or until a tooth-pick inserted in center comes out clean.
- Cool 10 minutes, remove from pan.
- Makes one 16-slice loaf.
