Ingredients

  • 2 large eggs
  • 1 cup sugar
  • 1 cup eggnog
  • 1/2 cup butter or margarine
  • 2 teaspoons rum extract
  • 1 teaspoon vanilla extract
  • 2 1/4 cups flour, all-purpose
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg

Method

  • Heat oven to 350F (180C).
  • Grease bottom only of a 9x5 loaf pan.
  • Beat eggs in large bowl.
  • Add sugar, eggnog, margarine, rum extract and vanilla.
  • Blend well.
  • Lightly spoon flour into measuring cup; level off.
  • Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened.
  • Pour into greased pan.
  • Bake for 45 - 50 minutes or until a tooth-pick inserted in center comes out clean.
  • Cool 10 minutes, remove from pan.
  • Makes one 16-slice loaf.
