Ingredients

  • 9 oz. cooked tortellini and cooled
  • 2 c. shredded red cabbage
  • 12 oz. fresh spinach, stems removed
  • 2 large tomatoes, cored, cut tomato in half with core facing up, squeeze halves over barrel and remove seeds, then cut in 1/2-inch cubes
  • 1/2 c. thin sliced scallions in circles
  • 8 pieces salami or bacon, cut in 1/2-inch pieces (if using bacon, cook and drain before cutting)

Method

  • Mix all ingredients together and arrange in flat bowl so you can see all ingredients.
  • Pour ranch dressing over top of salad in thin lines so dressing does not cover all veggies, then serve. Serves 6 people.
