Ingredients

  • 1/2 c. rice
  • 1/2 c. sugar
  • 1/2 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 c. raisins
  • 4 c. milk
  • nutmeg
  • 2 c. milk
  • 1/2 c. uncooked rice
  • 1/2 c. light or heavy cream (I use half and half)
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 1/3 c. sugar or less
  • 2 Tbsp. butter or margarine
  • cinnamon (on top)

Method

  • Cook first two ingredients together in a double boiler for 1 to 1 1/4 hours, stirring occasionally.
  • May be necessary to add a little milk.
  • Add remaining ingredients, mixing well.
  • Vary by adding currants or raisins part-way through cooking period.
