- 1 cup Cooked Chicken, Diced (optional)
- 2 Tablespoons Olive Oil
- 1 envelope (1 Oz. Packet) Dry Italian Dressing Mix
- 1/2 whole Onion, Diced Small
- 1 cup Orzo Pasta
- 2- 1/2 cups Water
- 2 cups Frozen Peas Or Mixed Vegetables, Thawed
- 1/2 cups Grated Parmesan Cheese
Method
- Heat oil in a skillet over medium-high heat.
- Sprinkle in dressing mix and stir for a few seconds.
- Add onion and saute until it just starts to soften.
- Add chicken and cook for a few seconds.
- Add orzo and water.
- Bring to a boil.
- Cover and lower heat.
- Simmer for 10 minutes, or until pasta is done and most of the water is absorbed.
- Add veggies and cheese, turn heat up and cook for a few minutes until heated through.
- Serve with additional cheese if desired.
- Note: I have made this with just vegetables and it is great.
- You can also substitute chicken or vegetable broth for the water.
