Ingredients

  • 1 cup Cooked Chicken, Diced (optional)
  • 2 Tablespoons Olive Oil
  • 1 envelope (1 Oz. Packet) Dry Italian Dressing Mix
  • 1/2 whole Onion, Diced Small
  • 1 cup Orzo Pasta
  • 2- 1/2 cups Water
  • 2 cups Frozen Peas Or Mixed Vegetables, Thawed
  • 1/2 cups Grated Parmesan Cheese

Method

  • Heat oil in a skillet over medium-high heat.
  • Sprinkle in dressing mix and stir for a few seconds.
  • Add onion and saute until it just starts to soften.
  • Add chicken and cook for a few seconds.
  • Add orzo and water.
  • Bring to a boil.
  • Cover and lower heat.
  • Simmer for 10 minutes, or until pasta is done and most of the water is absorbed.
  • Add veggies and cheese, turn heat up and cook for a few minutes until heated through.
  • Serve with additional cheese if desired.
  • Note: I have made this with just vegetables and it is great.
  • You can also substitute chicken or vegetable broth for the water.
