Ingredients

  • 8 ounces spinach fettuccine or 8 ounces green noodles
  • 12 cup green onion, sliced
  • 3 tablespoons butter or 3 tablespoons margarine
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 6 12 ounces canned tuna, drained and broken into chunks
  • 4 ounces feta cheese, crumbled (1 cup)
  • 12 cup sliced ripe olives

Method

  • Cook fettuccine or noodles according to package directions.
  • Drain well; keep fettuccine warm by placing in colander over a pot of warm water and cover.
  • Meanwhile, in a medium saucepan cook onion in butter or margarine until tender but not brown.
  • Stir in flour.
  • Add milk all at once.
  • Cook and stir over medium heat until thickened and bubbly.
  • Cook and stir for 1 minute more.
  • Gently stir in tuna and 1/4 cup of the cheese.
  • Spoon tuna mixture over the hot cooked fettucine or noodles.
  • Sprinkle with remaining cheese and olives.
  • Serve immediately.
