Ingredients
- 1 c. Cornmeal
- 1 c. Unbleached flour
- 2 Tbsp. Granulated sugar
- 4 tsp Baking pwdr
- 3/4 tsp Salt
- 1/4 tsp Black pepper
- 1 x Egg white -- whipped
- 1 c. Skim lowfat milk -- at room Temperature
- 1/4 c. Applesauce -- at room Temperature
- 3 Tbsp. Basil
Method
- Preheat oven at 350.
- Prepare a 8" square baking pan with cooking spray and flour.
- In a mixing bowl, combine cornmeal.
- flour, sugar, baking pwdr, salt, and pepper.
- In another mixing bowl, combine egg white, lowfat milk, applesauce, and basil.
- Mix dry ingredients with wet ingredients just till moistened.
- Spread batter into prepared pan.
- Bake for 18 to 22 min, or possibly till top is light golden brown.
