Ingredients

  • 1 c. Cornmeal
  • 1 c. Unbleached flour
  • 2 Tbsp. Granulated sugar
  • 4 tsp Baking pwdr
  • 3/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1 x Egg white -- whipped
  • 1 c. Skim lowfat milk -- at room Temperature
  • 1/4 c. Applesauce -- at room Temperature
  • 3 Tbsp. Basil

Method

  • Preheat oven at 350.
  • Prepare a 8" square baking pan with cooking spray and flour.
  • In a mixing bowl, combine cornmeal.
  • flour, sugar, baking pwdr, salt, and pepper.
  • In another mixing bowl, combine egg white, lowfat milk, applesauce, and basil.
  • Mix dry ingredients with wet ingredients just till moistened.
  • Spread batter into prepared pan.
  • Bake for 18 to 22 min, or possibly till top is light golden brown.
